Looking for a dish that says “I’ve got my life together” — even when you don’t? Same. That’s why we’re recommending this Calabrian Chili Chicken With Caper Raita from Zaynab Issa’s new cookbook, Third Culture Cooking. In the weeknight wonder, chicken thighs are marinated in an intensely flavorful mix of yogurt, ginger, garlic, and chili paste, then baked to golden perfection alongside cumin-coated sweet potatoes. Serve that with quick-pickled cucumbers and an obsessively good feta-caper raita — and you’ve got a salty, savory, and slightly spicy masterpiece.
The Time Commitment: Just over an hour — as long as you marinate the chicken overnight.
Key Tips: Good news for capers haters: Olives work equally well, says Issa, who recommends swapping the caper brine with lemon juice or olive brine. Also, if you can’t find any Calabrian chili paste at the store, use another concentrated chili paste (think: gochujang or harissa).
Other Takes: Craving more life-changing (or, at least really good) chicken dishes?
